Cook

Job Summary 

Prepares, seasons, and cooks meats, vegetables, deserts, or other foodstuffs in accordance with established menus and dinner requests. Ensures that all members and guests have their expectations met and exceeded. Maintains highest professional food quality and sanitation standards.


Job Duties & Responsibilities

- Sets up food preparation stations, ensuring they meet sanitary standards. Regulates the temperature of ovens, broilers, grills and roasters.


- Prepares food for cooking. Washes, peels, cuts and seeds fruits and vegetables to prepare them for consumption. Butchers and dresses animals, fowl and cuts and bones meat prior to cooking. Prepares relishes and hors d'oeuvres. Checks the quality of the food being prepared to ensure food quality standards are met. Ensures foods are stored properly. 


- Ensures that high standards of sanitation, cleanliness and safety are maintained at all times. 


- Seasons and cooks food according to recipes and personal judgement and experience. Bakes roasts, boils, and steams meat, fish, vegetables, and other foods. Carves and trims meats for hot or cold service. Bakes some breads and rolls. 


- Portions, arranges and garnishes foods.


- Cleans work stations and equipment in accordance with established sanitary standards. 


- Performs other related duties as assigned. 


Dress Code

An appropriate cook uniform will be worn at all times. 


Requirements

Previous experience as a cook in a fine dining or upscale restaurant. Country Club experience is preferred. Formal training in a culinary arts program is preferred. Ability to prepare food in accordance with recipes. Ability to work under stressful conditions and the ability to ensure high standards of cleanliness and hygiene in the food preparation areas.

Dishwasher

Job Summary 

Cleans dishes, pots and pans and utensils during service time. Sets up and maintains dish washing machinery. Clean kitchen and machinery. May assist with food preparation. Maintains highest Department of Health hygiene and sanitation standards. 


Job Duties & Responsibilities

- Sets up machines and sinks for nightly production. Checks and maintains detergent levels. Keeps areas around the dish machine clean and organized at all times. 


- Cleans dishes, glasses, silverware, pots and pans and other cooking utensils during service time. Place clean dishes, utensils, and cooking equipment on the line or in appropriate storage areas. Empties all kitchen trash receptacles and sweeps and mops floors on a nightly basis. 


- Ensures that high standards of sanitation, cleanliness and safety are maintained at all times. 


- May assist with preparing vegetables and other food. Cleans various foods for cooking or serving. 


- Each Sunday, performs the following duties: Sweeps and mops boxes 1,2, and 3, office floors, and linen room; power-washes kitchen floors; cleans around the dish machine; cleans backroom storage shelves, as well as bins and top and bottom shelves around the kitchen; cleans walls around the kitchen, cleans ovens, hot box, and ice cream box, pulls vents and cleans hood system, front and back, as well as the fridge hood; wipes down equipment around the kitchen; washes floor mats; and cleans trash cans and the back dock area. 


- Helps load and unload trucks that deliver or pick up food supplies. Stores supplies.  


- Performs other related duties as assigned. 


Dress Code

Must wear sleeves and no printed logo shirts.


Requirements

Previous experience and knowledge of food preparation and kitchen maintenance. Previous experience as a dishwasher is preferred. Ability to operate and regulate dish washing machines to clean utensils and tableware. Ability to maintain a clean and tidy kitchen by ensuring dishes and utensils are arranged in proper storage unites. Ability to work for extended periods while standing or moving. Strong work ethic is required.

Bartender

Job Summary 

Provides exceptional service to members and their guests, ensuring they enjoy a superior dining experience. Takes orders and serves food and beverages to guests. Regularly circulates among the diners to refill beverages and to ensure their needs are met. Covers for other servers during busy times to ensure all customer needs are met in a timely manner. 


Job Duties & Responsibilities

- Learn menu items and be able to describe them appropriately to members and guests.  


- Greets members and guests and makes them feel comfortable.  


- Prepares alcoholic and non-alcoholic beverages for bar and dining room members and guests. Checks identification and confirms it meets the legal drinking age. Pours wine and draft beers. Mixes ingredients to prepare cocktails according to recipes. Makes drinks for wait staff who place orders for dining room. Does not over-serve members / guests. Informs manager of any intoxicated customers.  


- Provides menus to members and guests and answers questions about menu items, making recommendations upon requests. Explains how various menu items are prepared, describing ingredients, and cooking methods. Promotes food and beverage specials.  


- Operates POS; enters all sales and provides members / guests with their bill. Collects payments from members and guests as required. 


- Regularly checks with members and guests to refill beverages and respond to requests.  


- Works well with wait staff and kitchen staff to ensure prompt and exceptional member service.


- Cuts and prepares garnishes for drinks.


- Ensures general bar cleanliness daily. Wipes down bar top. Wipes down all coolers and cabinets. Sweeps and mops floor behind bar. Empties trash. Washes and stocks glassware. Cleans and wipes down tables in bar lounge to ensure tables are ready for guests. Rolls silverware. 


- Stocks bar inventory and supplies; napkins, cups, lids, straws, etc. Stocks beer and wine rotating stocks. Maintains adequate supply of ice. 


- Attends and completes ABC responsible server classes. Maintains a knowledge of ABC regulations. Learns and possesses general knowledge of wines, craft beers and domestic beers. 


- Communicates any needs to manager to successfully ensure a high level of member service. 


- Assumes role of Server as needed. 


- Performs other duties as required. 


Dress Code

In the bar and bar lounge, clean black slacks, a clean white shirt and a black tie are required. In the Men's Grill, clean black slacks and a polo shirt are required. 


Requirements

High school diploma or related certification. Certified bartender. Proven experience working as a bartender using point of sales terminals. Basic math skills. Ability to lift heavy trays filled with glassware/food. Ability to be on your feet for long periods of time. Professional and friendly. Effective communication skills with guests and staff. Great attention to detail. Team player. Possess a general knowledge of wines, craft beers, and domestic beers.

Server

Job Summary

- Write food orders on order slips, memorize orders, and enter orders into computers for transmittal to kitchen staff.  


- Serve food and beverages to members and guests, and prepare or serve specialty dishes at tables as required. Prepare hot and cold drinks for guests, and chill bottles of wine. 


- Regularly check with members and guests to refill beverages and respond to requests. 


- Work with other servers and be a team player. Assist other servers as needed to ensure customer needs are met in a timely manner.


- Prepare checks that itemize and total meal cost and sales taxes.

 

- Collect payments from members and guests as required. 


- Prepare foods such as salads, desserts and other servings as required.

 

- Clean tables after members and guests have finished dining.
